CajetaLoversUSA.com is open for business!

Our commercial kitchen is complete, has passed inspection and has become Utah Dept of Ag Certified. Along with that, our milk barn was certified, so we’re now milking a half dozen darling does, and producing batches of our ooey-gooey, udderly addictive, love in the jar, Traditional Mexican Cajeta.

This goat milk based caramel sauce will make any dessert out of this world, crazy good.

Here’s what we’ve done to bring you this awesome sauce.

First, we had to develop our goat herd. We’ve been working on this for the past 3 years, finally getting the point where we have enough goats to provide us milk on a regular basis. We’re developing our own line of Alpine/Nubian cross goats, maintaining a high fat content while improving on overall milkability, and quantity of milk. We personally smell and taste each goat’s output daily.

A Spring awakening at Four Country Gals

Time for a new look! We’ve hired a graphics arts/designer to create a new, lighter, more updated look as we move towards the launch of our Traditional Mexican Cajeta, goat’s milk-based caramel sauce. We’ve reviewed the material, and have asked for an invoice. Just as soon as we’ve paid for her work, then I will begin the¬† process of updating our websites.

I’ll update Cajeta Lovers USA first, as it is currently the newest site and generates the least amount of traffic. I don’t expect any problems, but I’ve been around IT, and software long enough to know that things happen.

Let’s talk Traditional Mexican Cajeta, aka Caramel Sauce

Have you ever put something into your mouth, closed your eyes, rolled your tongue around, felt the silkiness of the sauce, inhaled the delicate aroma of Mexican Vanilla, finally swallowed, and immediately licked your chops, waiting for the next bite?

Yeah, it’s that good!

Here’s the lowdown. Our Traditional Mexican Cajeta (pronounced ca-hay-ta) is a traditional milk-based caramel sauce. It is traditionally made using fresh goat milk (we milk our own goats), cane sugar (or evaporated cane juice), Mexican Vanilla, Ceylon Cinnamon, Sea salt, and baking soda. These are the exact ingredients we use.

While we call it Cajeta (the Mexican translation of caramel made with goat milk), it is simply a goat-based confection that may be used as a topping for many different things. Starting with “straight from the jar”, which is also the most addicting way to enjoy it, you can top ice cream,

A summer review of our DHA Family Farm activities

During the summer, we get all wrapped up in our day-to-day operations. From late spring when the babies are born, and planting all the veggies, it seems day runs into night, and back to day again.

So, here we are, smack in the middle of summer harvests.

This year, we began using the new twin high tunnels, most often referred to as hoop houses. We began planting April 22, nearly a full two months earlier than our normal outdoor planting dates.

We’ve harvested sugar snap peas, radishes, green beans, tomatoes,¬† broccoli, squash blossoms, beets, swiss chard, two kinds of arugula, basil and cilantro. Still to come are more tomatoes, more broccoli, cauliflower, kale, spaghetti squash, peppers, radicchio, carrots, and potatoes.

Along with those veggies, we also have straw-bale beds with several kinds of lettuces, spinach, peppers, and more potatoes. And, then there are the onions,

Huge race to the finish… we want to remain #1

We’re now entering the final week of competition¬† for the “She Can Pitch” sponsored by Grow America of Utah. There are more than 50 companies now entered.

We are in 1st place and with your help will be there at the end of the race.

Here’s why we deserve to win:

  • We want to win to validate our project. We will be making Cajeta, a traditional Mexican sweet caramel sauce.
  • We meet every criteria set forth by the judges of this competition.
  • We have a written business plan complete with projected financials.
  • Making Cajeta allows us to use the milk from our Nubian and Alpine goats.
  • This project costs a fraction of what it would cost to build a cheese making facility.
  • There is a very high demand for Cajeta.
